sesame chicken with garlic sauce
You will need:
 |
175g (6ozs) Chicken fillet strips

1 tablespoon cooking/sesame oil
|
 |
2 cloves of garlic, crushed
|
 |
1.5 teaspoon brown sugar
|
 |
6 spring onions sliced
|
 |
1 teaspoon freshly chopped root ginger
|
 |
125ml (4fl.oz) chicken stock
|
 |
2 tablespoons dark soy sauce
|
 |
0.5 teaspoon black pepper
|
 |
2 teaspoons cornflour
|
 |
2 tablespoons sesame seeds
|
What to do:

Place chicken strips* in bowl and cover with a mixture of garlic, cooking/sesame oil, ginger, sugar, soy sauce and pepper. Cover with film and marinate 30-60 minutes.

Combine cornflour with stock, add to the marinade, stir well. Cover dish and microwave 4-8 minutes, stirring halfway through. Add the sliced onions and sesame seeds. Leave to stand 2 minutes.

Serve with hot rice.

TIP: Rice/Pasta Packs
To save time and effort, bulk cook rice and pasta in the usual way. Cool very quickly by placing in a strainer under running cold water. This also separates the rice/pasta. Then pack in bags to suit your family catering and freeze. Defrost when needed. (Only one lot of washing up pans and strainers!)
*Pictures shown use whole ckicken breasts, whilst the recipe works as well with whole pieces, it is recommended to cut the chiken into strips before cooking.
