quick chilli bean hotpot
You will need:

400g (14 oz) Tin of Red Kidney Beans

100g (4 oz) Green beans
|
 |
225g (8oz) Tin of tomatoes
|
 |
1 tablespoon tomato puree
|
 |
1 and a half teaspoons chilli powder
|
 |
450g (1lb) potatoes (cooked)

What to do:

Drain both the beans, place in large Microwave bowl, mix in the tomatoes, puree and chilli powder.

Thinly slice the potatoes and arrange over the top.
|

Microwave 6-8 minutes until boiling hot, stir carefully underneath the potatoes a couple of times during cooking. |
Serves 2-3
This is an extremely nutritious meal produced quickly with store-cupboard ingredients. You could substitute other types of beans, flageolet for example or go half and half.
