Microwave Magic

herb and cheese bread

You will need:

225g (8 oz) self-raising wholemeal flour
1 teaspoon baking powder
100g (4 oz) grated cheddar cheese
3 tablespoons roughly chopped herbs of your choice
75g (3 oz) roughly chopped black olives
2 tablespoons olive oil
225ml (8 fl oz) milk
1 egg

Topping

25g (1 oz) grated cheese
1 tablespoon roughly chopped herbs of your choice
25g (1 oz) roughly chopped black olives

What to do:



Place all dry ingredients in a large bowl and stir in the milk and beaten egg. Mix very well and spoon into a 1 kg (2 lb) loaf dish (it is a good idea to line the base with parchment or greaseproof paper - if you don't have a loaf dish extend the sides of what you've got with folded over parchment). Level the surface and sprinkle on the topping ingredients



Stand dish on a roasting rack (or upturned plate). Microwave on high for 3 minutes and then 14 minutes on medium or until firm to the touch or well risen.

You can create your own delicious speciality loaf, similar to the ones available in the supermarkets, but much cheaper.
