Microwave Magic

easter biscuits

You will need:

225g (8 oz) plain flour
175g (6 oz) softened butter
1 teaspoon ground mixed spice
teaspoon ground nutmeg
175g (6 oz) Demerara Sugar

What to do:



Sift together the flour and spices into a bowl, add the butter and 100g (4 oz) Demerara sugar, mix together with a fork and then bring together and knead into a firm dough.



Divide the dough into 2 and form each into 15cm (6") roll.



Place the remaining Demerara Sugar on a piece of baking parchment, then roll each biscuit mixture in the sugar, to that the edges of the roll are coated with sugar.


Slice each roll into 16 slices.



Prepare 5 baking parchment circles to fit the Microwave carousel, then place 5 biscuits on the parchment-covered carousel. Microwave 1-2 minutes until the biscuits are dry on the top. (The cooking time will gradually reduce because the oven will become warm with use).

Occasionally one or two biscuits might burn before the rest are cooked, remove them from the oven quickly and continue cooking but reduce the cooking time.



Cool on a wire tray; continue until all the biscuits are cooked, you might need to replace the baking parchment (if you wish, wrap the biscuit roll in cling film, keep in refrigerator and Microwave later).
Makes 30-32 Biscuits

These biscuits have been traditionally made at Easter time with spices from the East, some recipes include currants.
