Place a 30cm x 30cm (12" x 12") square of baking parchment on a marble slab (or on a flat heat-proof surface) ready for the hot chocolate mixture.

Break up the chocolate, place in medium sized Pyrex bowl, Microwave 2-3 minutes (or until the chocolate looks shiny and is beginning to melt, then stir very briskly to prevent the chocolate burning) when the chocolate has completely melted stir in the Demerara sugar and peppermint essence.

Quickly spread over the baking parchment and shape into a flat surfaced square, just as setting point is reached cut into squares or fingers to make delicious mint crisps. |
