How to cook
fish and (clay) chips



Some cultures, like people from Mauritania, actually cook in clay - and that doesn't mean in a pot. It's much simpler than that.

What to do

Take a whole gutted fish - including fins and scales and smother it in a layer of clay 1" or 25mm thick.

Then place it in an oven or an open fire until it's as hard as rock. The clay particles bond together to form an impermeable seal so no juices can escape.

On opening your fish will be succulent and minus all its scales!
